🧁 Choosing the Right Pan

Always use the pan size specified in your recipe. A pan that’s too large can lead to dry, overbaked bars, while a smaller pan may result in undercooked centers and tough edges.

For best results, opt for shiny metal pans—they reflect heat and help prevent overly browned crusts. If you're using dark nonstick or glass pans, follow the manufacturer's instructions. These pans absorb heat more quickly, so reduce your oven temperature by 25°F or check for doneness 3–5 minutes before the minimum bake time.

To avoid scratching nonstick surfaces, use a plastic knife when cutting. This is especially helpful for sticky treats like lemon bars or gooey brownies.
