Butterscotch Brownies – A Low-Fat Chewy Classic

Ingredients:

  • ¼ cup butter or margarine
  • 1 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 1 large egg
  • 1 cup all-purpose flour
  • ½ cup chopped nuts (optional)
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Nut lovers, take note! For extra crunch and flavor, press pecan halves or chopped pecans onto the top of the batter before baking.

Instructions:

  1. Preheat your oven to 350°F. Grease the bottom and sides of an 8x8x2-inch square pan with shortening.
  2. In a 1½-quart saucepan, melt the butter over low heat. Remove from heat and stir in the brown sugar, vanilla, milk, and egg.
  3. Add the remaining ingredients and mix well. Spread the batter evenly in the prepared pan.
  4. Bake for approximately 25 minutes, or until the top is golden brown.
  5. Cool in the pan on a wire rack for five minutes. While still warm, cut into 16 squares (4 rows by 4 rows).
