Lace Roll-Ups – A Swedish Cookie Classic

Golden, crisp, and lacy—these delicate cookies are a beloved treat in Sweden, traditionally rolled while warm around a wooden spoon handle. Whether you roll them or leave them flat as Lace Crisps, they’re a beautiful addition to any cookie tray.


Ingredients

  • 1 cup all-purpose flour*
  • 1 cup finely chopped nuts
  • 1/2 cup corn syrup
  • 1/2 cup shortening
  • 2/3 cup brown sugar (packed)

*Do not use self-rising flour in this recipe.


Instructions

  1. Preheat oven to 375°F.
  2. In a bowl, mix together the flour and nuts; set aside.
  3. In a medium saucepan, heat corn syrup, shortening, and brown sugar over medium heat, stirring constantly until it reaches a boil.
  4. Remove from heat and gradually stir in the flour-nut mixture until well combined.
  5. Drop dough by teaspoonfuls onto a lightly greased baking sheet, spacing them about 3 inches apart.
  6. Bake 8–9 cookies at a time for about 5 minutes.
  7. Let cookies cool for 3 minutes before removing from the sheet.
  8. While still warm, roll each cookie into a cylinder. If they harden before shaping, return them briefly to the oven to soften.
  9. Makes about four dozen cookies.

Lace Crisps Variation

Prefer a flat version? Let cookies cool for 3–5 minutes, then remove from the baking sheet and cool on a wire rack—no rolling required.
